FLSA Status:  Exempt = not eligible for overtime
Work Schedule: Position works a variable schedule that is dependent upon the event/athletic schedule; including variable shifts and days off with regular evening and weekend shifts, and the potential for holiday shifts. The position requires the ability to be on-call.
Salary: Targeted salary range: $50,400-$54,200
Travel: No travel
Brief Statement of Duties
Brief Statement of Duties: Manage all aspects of the food/beverage/alcohol concession operations in the Superior Dome, PEIF and Berry Event Center. Plan, order, receive, schedule, assign and assist in the production and service of menu items and other responsibilities. Oversee the training and supervision of assigned staff to ensure efficient and high quality service standards. Responsible for the fiscal and operational success of the food and beverage operations within concessions for NMU Dining Service.
Minimum Qualifications
Required Education: Associate's Degree
Discipline / Degree Area: Culinary Arts, Hospitality Management, Business Management or a related field
Required Specialized Training/Certifications: Bachelor's Degree in Culinary Arts, Hospitality Management, Business Management or a related field with three years' experience in the food service industry or an Associate's Degree in Culinary Arts, Hospitality Management, Business Management or a related field with five years' experience in the food service industry.
Required Minimum Work Experience: Two years' work experience in purchasing, inventory control, cost control and financial management.
Two years' experience in a leadership/supervisory role.
Two years' experience with food/beverage equipment.
Knowledge, Skills, Abilities, or Attributes Required for Satisfactory Performance of the Position Duties: Knowledge to understand and adhere to all Marquette County Health Department codes/regulations and Michigan Liquor Control Commission regulations.
Knowledge of computerized menu management systems.
Knowledge of cash handling including counting, reconciling, deposits and preparation of cash bags; and POS (point of sales) equipment including cash register and its peripherals.
Knowledge of principles and processes for providing customer and personal service including the ability to interact with a diverse customer base in a friendly and efficient manner with a focus on providing exceptional guest services.
Knowledge of business and management principles involved in planning, resource allocation, human resources modeling, leadership techniques, production methods and coordination of people and resources.
Excellent oral and written communication and comprehension skills.
Leadership skills.
Computer skills to include word processing, spreadsheets, database management, e-mail and web based applications.
Ability to problem solve and think critically for immediate solutions.
Ability to promote and participate in team environment concepts.
Ability to be on-call and available to work flexible and demanding hours including nights, weekends and holidays. Must be available to accept calls, text messages and e-mails from their staff and supervisors.
Ability to effectively respond to a high-pressure environment and/or unpredictable outcomes.
Ability to manage the daily events and operations in multiple locations with a focus on cost control and guest services while maintaining product quality.
Ability to coordinate services with outside vendors and service providers.
Ability to work with minimal supervision and accomplish tasks with minimal direction.
Additional Desirable Qualifications
Additional Desirable Qualifications: Experience with alcohol sales/service.
Knowledge of union contracts and work environments.
Experience with (CBORD) Food Service Suite and (MICROS) point-of-sales system.
Current ServSafe Alcohol or Tips Certification.
Current ServSafe Food Service Sanitation Certification.
